Salad Recipe – Beetroot and Corriander Salad
3 raw beetroot, peeled and coarsely grated
1 bunch of coriander washed and chopped (including stems)
1 generous handful of fresh mint leaves (chopped, leaves only)
Juice of 2 lemons
salt and freshly ground pepper to taste
Mix all ingredients together and serve.
This recipe keeps well in the refrigerator for a number of days. It does make a large amount, so adjust quantity according to your need.
